  1. Make ready 5 each Idaho potatoes (2 pounds) – peel, dice cook 34 inch

  3. Make ready 3 eggs – hard boiled 15 minutes, chopped
  4. Make ready 1 small onion – finely chopped

I like mine a bit chunky but you can mash it very fine, if you want. In a large glass measuring cup add the mayonnaise, Sriracha sauce, salt, onions, peppers, olives and celery. Combine mayonaise, sour cream, and sriracha chili sauce in a small bowl. Once the potatoes have cooled a bit, fold in using the rubber spatula.

  1. Place the eggs in boiling water for 15 minutes. Then run under cold water to cool, peel underwater and chop the eggs small.
  2. Dice the potatoes into 34" cubes then place in a saucepan and cover with cold water -1 inch over the potatoes.
  3. Add salt to the water - Bring to a boil and turn down to a simmer. and cook until done about 15 minutes.
  4. Do not drain off the water until you are sure that the potatoes are done. Then cool the potatoes on a sheet pan in the refrigerator.
  5. Combine all ingredients and mix well, adjust the seasonings as needed then chill and serve.
