- Make the paratha dough - 1 cup whole wheat flour, 1⁄4 cup water, 1⁄4 tsp salt, 1 tbsp oil. Mix it all together and keep it aside for 30 minutes.
- Peel and slice potatoes and carrot.
- Boil potatoes until well cooked. Strain and keep it aside.
- In a pan, add a tablespoon oil, add cumin seeds, let it fry for a minute. Add chopped onions and green chili (optional).
- Add tomato sauce (or chopped tomatoes), stir it well, add sliced carrot and corn. Let it cook for 3-5 minutes.
- Add the coriander powder, salt, chili powder. Mix it well.
- Add the boiled potatoes. Mix it well. Let it cook for another 5 minutes. Add chopped parsley/coriander. Keep it aside.
- Divide the dough into 4 pieces and roll each pieces thin. Bake the roti in a pan for 3-4 minutes each side.
- Place the cooked vegetables on the roti and add sliced cucumber (optional) in the middle.
- Fold the bottom side up and fold the side, roll it and use toothpick to stick them together.
- Continue with the rest.
