I developed my recipe to pay homage to the rich, milky flavour of traditional Gulab Jamun. I use full-fat milk powder to enrich the cake batter with a subtle creaminess reminiscent of the Gulab Jamuns I ate growing up. Classic Gulab Jamun recipes feature grated milk solids (mawa). Instructions to make Gulab Jamun Mini Bundt Cakes:
  1. In a bowl, add oil and sugar. Beat untill light and Fluffly.
  2. Separate 2 tbsp milk from 1 cup milk, warm it a little and then soak saffron strands in it.
  3. Now add all milk and mix well (add saffron soaked milk too).
  4. In another bowl, sieve all dry ingredients and then add crushed seeds of cardamom. Use can use cardamom powder too. Mix well.
  5. Mix dry and wet ingredients, do not over mix.
  6. Now take mini bundt cake mould (you can use cupcake mould too) and fill it 23 rd with batter.
  7. Bake these in preheated oven at 170 degrees celcius for 22 to 24 mins.
  8. After baking, let them cool down and unmould it quickly.
  9. For sugar glaze: Mix the icing sugar with gulab jamun syrup. There should not be any lumps.
  10. Now poke holes in bundt cake, soak with gulab jamun syrup, pour some sugar glaze and then sprinkle dried rose petals and pistachios.
  11. Top it with gulab jamun.
